Moong Dal Khichdi

- 1/2 cup split yellow moong dal
- 1/2 cup rice basmati or short grain
- 1 tbsp ghee or oil
- 1/2 tsp cumin seeds
- 1/4 tsp asafoetida hing
- 1/2 inch ginger grated
- 1 green chili chopped (optional)
- 1/4 tsp turmeric powder
- Salt to taste
- 4 cups water
- Fresh coriander for garnish
- Optional Veggies chopped small:
- 1/4 cup carrots
- 1/4 cup green peas
- 1/4 cup beans
Rinse rice and moong dal together 2–3 times. Soak for 10 minutes (optional for softer texture).
In a pressure cooker or pot, heat ghee. Add cumin seeds, asafoetida, ginger, and green chili. Sauté briefly.
Add turmeric and optional veggies. Cook for 2–3 minutes.
Add soaked rice and dal. Mix well and add 4 cups water and salt.
Pressure cook for 3–4 whistles (or simmer in a pot until soft and mushy).
Stir gently. Add more water if needed for a softer consistency.
Garnish with coriander and serve hot with yogurt, pickle, or papad.
Notes: For a lighter version, skip the chili. For extra flavor, top with a spoon of ghee before serving.
